That's something I'm looking for as well, but I figured with the addition of profiles that I could easily switch back and forth between monitor setups on my laptop.

I'm not sure if they'll get in three monitor support by the time Ubuntu 7.10 is released, but I'm sure that would be coming shortly after.

It's not actually that hard to get dual monitors going at the same time, though it does require manual configuration of the xorg.conf file. Even the nVidia GUI screen doesn't really do the trick. What is impractical is to switch back and forth. Like with a laptop SOMETIMES you plug in the monitor and sometimes you're away from the desk where the monitor is. It would really be great if you could just hot plug the monitors at will and they either worked right away or a gui came up to ask you how you wanted to set the new monitor up.

I would love to see Ubuntu get away entirely from editing xorg.conf manually however, hopefully next release it will happen.

Good more features. As right now it's hard with my laptop when I hook it up to a projector in class.
